Today, let me share with you a simple yet satisfying dish I cooked last night. It's sardines soup with Sotanghon noodles. ☺️😋
For us Filipinos, sardines is one of those pantry staples that we always find ways to transform into something more filling and comforting. It may not be extra ordinary, but when prepared with love, it becomes a meal that warms both the stomach and the heart. ☺️❤️
Since I’m still not feeling well and the rain has been coming and going, I’ve just been staying home, mostly lying in bed, eating light meals, and taking my medicines. But of course, food still plays a big part in making me feel a little better, especially when paired with something warm like this soup.
Magic Shikika Recipe: Sardines Soup With Sotanghon Noodles
Ingredients: ✓ 1 can small sardines ✓ 1 small pack Sotanghon noodles ✓ 1 onion ✓ 1 tomato ✓ 2 cloves garlic ✓ A little portion of ginger ✓ 1 tbsp oyster sauce ✓ 1 tbsp cooking oil ✓ A bit of Salt ✓ A bit of ground pepper ✓ Water (1 sardines can)
Procedures:
1. Prepare the ingredients. Wash, peel and chop onion, garlic, tomato and ginger.

Heat oil in a pan. Sautee garlic, onion, tomato and ginger.

Add sardines including the sauce.

Add water, oyster sauce, salt, ground pepper and Sotanghon noodles. Let it cook.

Remove from fire when cooked and serve while hot, best paired with rice.
That’s my simple yet comforting recipe for last night’s dinner. It truly satisfied my tummy and gave me relief sipping the hot soup while the rain poured outside. ☺️❤️
Today, my sister took charge of cooking. She prepared banana turon and pork shanghai for our meals the whole day. She didn’t go to work either since she wasn’t feeling well and, with this gloomy weather, it’s best to stay home and rest. ☺️❤️
Despite the little trials of not feeling well, I still feel thankful. Food, even the simplest ones, gives me comfort and joy. ❤️🙏
