This afternoon, I cooked something special. 🤭 I was craving burger and fries, so since I already bought burger buns and French fries at the grocery yesterday, I decided to make my own version today. I didn’t buy burger patties, but I had eggplant, eggs, and breading mix at home. So, I came up with an idea: why not make my own eggplant patty? ☺️🤭
This became both my snack and dinner. I skipped the rice this time and just enjoyed two burgers with a side of French fries. ☺️
So, I took out eggplants, tomatoes, eggs, and French fries from the fridge. First, I sliced 4 pieces of eggplant, removing the parts damaged by worms. I boiled them in a pan with water until soft.
When they were cooked, I strained them and set them aside to cool.
While waiting, I fried some French fries until golden and crispy.
Then, I minced 1 onion, 3 cloves of garlic, and 1 tomato. I also mashed the cooked eggplant, the skin included.
Next, I added 2 eggs, breading mix, ground pepper, and oyster sauce. In the picture you’ll see only 1 egg, but I actually added 2. I just forgot to take another photo. 🤭
I mixed everything together thoroughly.
Then, I scooped one big spoon of mixture at a time, flattened it on the pan, and fried both sides until golden. I repeated this until all patties were cooked.
While frying, I also prepared the burger buns. Once the patties were done, I reheated the buns on the pan for extra flavor.
I plated the burger with some ketchup spread on the buns and added my eggplant patties.
Finally, everything was ready, my homemade burger with eggplant patties and crispy fries for dipping in ketchup.
It was delicious! 😋☺️ I finished 2 burgers myself and ate most of the fries and only a few were left for my sister. 🤭
I still had leftover patties, so tomorrow they’ll be paired with one fried fish from yesterday’s Adobong Paksiw leftovers. ☺️
When my sister arrived, she had rice with the cheesy pork I cooked last night. She also enjoyed the French fries and burger with a refreshing glass of lemonade. ☺️❤️
