The Leftover Fried Rice Fiesta

The best thing when making your own food is you get to decide what and how much ingredients to use. No one's going to ask you why are you adding this or that. Ah, life's so peaceful! Lol.

So one morning, I remembered my long forgotten leftover frozen foods. It's been in the freezer for many months and I've decided it's time to consume it to clear the container and refill it new stocks on my next visit to the grocery.

With the leftover frozen foods, I had this bright idea of mixing it in the fried rice.

Fried rice fiesta? More like processed foods fiesta! Lmao. But thanks to the leftover corn kernels, maybe it made the food somehow healthy.

For this fried rice, I had the longganisa, chicken embutido, corn kernels, and bacon. I guess if they don't smell weird then it's still okay, right? I didn't had an upset stomach after so that confirms that it's still safe to eat.

Alright, let's begin!


๐Ÿ“ Here's What You'll Need ๐Ÿ“

  • 1 Cup Uncooked Rice
  • 2 Cups Water (for cooking rice)
  • 2 Eggs (whisked)
  • 1 to 2 Tbsp. Butter
  • 1 Tbsp. Soy Sauce
  • 3/4 to 1 Bulb of Garlic (diced)
  • Corn Kernels
  • 3 Pcs. Longganisa
  • Chicken Embutido
  • Bacon
  • 3g Garlic Powder
  • Ground Black Pepper
  • 1 Tbsp. Cooking Oil
  • Water (for cooking longganisa)


๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ Let's Cook!!!

1.) The very first step is to wash the rice three times, fill it with water, then cook for around 20 minutes. Remove from stove and let it rest for at least 30 minutes. If you have leftover rice in the fridge then much better!

2.) Next is to cook longganisa. You know, this was the first I learned to cook it properly. I used to fry it immediately with oil. I didn't know you have to boil it with water first. So boil the longganisa with enough water to cover it. Bring down to simmer when it boils and wait for the water to evaporate or get absorbed by the longganisa. Don't forget to poke some holes using a fork to prevent it from bursting.

However, since it's my first time boiling longganisa, I was impatient and didn't wait for the water to evaporate completely. When it looked cooked, I took them out and threw the water and proceeded with frying.

3.) Pour some cooking oil on the pan for frying. I cut the longganisa sausages in half before frying because I like the inside have that burnt color. I also added the slices of chicken embutido on the side to save time.



4.) Once cooked, remove the fried longganisa and embutido from the pan and slice it into bits.



5.) Then on the same pan, put the bacon. I didn't add oil on this step because the pan still has some oil left from frying the embutido and longganisa. Also, bacon has its own oil. I also learned from my brother that you can just directly fry the frozen bacon. The clumps of bacon will detach by itself when it begins to soften due to heat. Set aside after frying.



6.) Put butter on pan and fry the garlic.



7.) Then add the whisked eggs. Let it sit for a while and mix it until you make scrambled eggs. Then add the garlic powder next. The garlic powder is already beginning to harden but don't worry, just mash it with the spatula.



8.) Then add the corn kernels next.



9.) And finally, the rice! I like fried rice a lot but I dislike mixing the rice because it takes a lot of effort to breakdown the clumps of rice.



10.) Then add soy sauce.



11.) Not visible on the photo but I added the ground black pepper here before putting the sliced longganisa and embutido.



Keep mixing until all ingredients are combined and evenly distributed.



And it's done!!!

I like biting into the bacon so I separated it. Lol. But look how oily the plate is. This recipe is surely not so healthy. Whew! It tastes good though! I also garnished the fried rice with some dried parsley.

I'm happy to have used up and reinvented the foods instead of just letting it stay longer in the freezer only to throw it later on when it begins to rot. Well, welcome to my random days where I make random recipes out of what's left on the fridge! Cooking and deciding what to cook for yourself is fun but really challenging!
