This recipe is my own style, one I often make when I have free time at the restaurant and want to improve my cooking skills.

Stir-fried Pork with Curry Paste, My Style

Recipes and ingredients

  • 250 grams pork, cut into bite-sized pieces (loin or neck)
  • 2 tablespoons red curry paste (adjust to taste)
  • 2 tablespoons vegetable oil
  • 30 grams kale, cut into pieces
  • 30 grams carrot, cut into pieces
  • 1 large onion
  • 3-4 kaffir lime leaves, torn and cored
  • 1-2 red chili peppers, sliced diagonally
  • 1 tablespoon fish sauce
  • 1/2 tablespoon palm sugar
  • A little water or stock
  • 1 handful basil leaves
  • 2 tablespoons fresh milk

method

  • Heat a pan over medium heat with a little vegetable oil. Add the red curry paste and stir-fry until fragrant.
  • Add the prepared pork and stir-fry until the pork is cooked through.

  • Add a little water or broth to prevent it from drying out.
  • Season with fish sauce and palm sugar and stir-fry to combine.
  • Add the vegetables, followed by the kale, carrots, and onions. Stir-fry until the vegetables begin to cook.
  • Add the kaffir lime leaves and red chili peppers.

  • Finally, add the basil leaves and stir-fry quickly until the basil leaves are wilted, then turn off the heat.
