Today, I'd like to share a special dish that instantly reminds me of my mother: yellow curry with pork leg and potatoes. It's a favorite dish my mother used to make regularly. The ingredients used in this dish are very easy to find. I bought pork leg from a department store in the city yesterday. I also have yellow curry paste and shrimp paste in my kitchen.

Ingredients

  • 500 grams pork leg
  • 2 potatoes
  • 2 tablespoons yellow curry paste
  • 1 tablespoon shrimp paste
  • 3-4 cups water
  • 2 tablespoons fish sauce
  • 1/2 teaspoon palm sugar (if desired)
  • Lime juice, to taste (for a sour taste)

How to make Yellow Pork Leg Curry with Potatoes

  • Prepare the ingredients:
  • Wash the pork leg 1-2 times, then cut into bite-sized pieces. Drain and set aside in a colander.
  • Wash the potatoes, peel them, and cut into cubes. Set aside.

  • Dissolve the curry paste:
  • Place a pot over medium heat and add water. Once the water begins to boil, reduce the heat slightly.
  • Dissolve the yellow curry paste and shrimp paste in the water. Stir until combined.

  • Once the curry paste has melted, add the prepared pork leg into the pot.

  • Increase the heat slightly and stir gently to allow the pork leg to absorb the flavors of the curry paste.
  • Simmer until the pork leg begins to soften, about 30-45 minutes, or until the pork leg is tender to your liking.
  • Add the potatoes and season.

  • Once the pork leg is tender, add the chopped potatoes.
  • Continue to simmer until the potatoes are tender but not too mushy.
  • Then season with fish sauce and palm sugar. Stir to combine. Taste for sour, salty, and spicy flavors. (If you like it more sour, you can add a little lime juice.)

  • Ready to serve
  • Scoop the yellow curry with pork leg into a bowl and serve. Enjoy with hot steamed rice and an omelet or fried egg for a truly delicious combination.
