When the Zucchini's in the garden are prolific, you have to find a way to use them, and this is one way that is very delicious.
Fritters
Equal parts of:
shredded carrots
shredded zucchini
shredded cheese - mixed variety
chopped parsley
2 eggs
add enough flour to thicken up the mix, similar to thick pancakes.
oil for frying
Mix everything together and drop large spoonful's into a frying pan with oil. Cook for two minutes on each side or until golden. Place on paper towels to absorb any excess oil and enjoy!
They were a perfect addition to the meatloaf and salt potatoes for dinner that night. Today, after canning some tomatoes I will be using up some more in a casserole for tonight's dinner.
Onions
The necks of the onions in the new raised beds had begun bending over. It was time to harvest most of them, so I decided to pull them all.
I had a fairly decent sized crop of both the Utah Spanish and the red onions. I laid them out on screens in the greenhouse to dry out. There is plenty of warm airflow and that side of the greenhouse is in the shade during the summer making it perfect for drying herbs and bulbs.
Potatoes
All the greens on a few potatoes had died back in the large cold frame. I had put one potato on each corner early in spring along with the cabbages. They were done and this is the little bit I got from 4 small potatoes.
I still have 4 large grow bags with potatoes in them, but they are still looking good at the moment. I will let them grow until all the leaves turn brown, hopefully I will get a nice crop this year.
