Swiss Chard & Sweet Potato Vine for Dinner - Preserving Cayenne Peppers - by Sunscape

The last of the Sweet Potato Vines were cut and pulled out along with the Swiss Chard that was still looking good. I saved the best leaves and washed them really well to fry them for greens that night for dinner.

I love the vibrant colors of all the greens and know that they are especially nutrient dense, which is so good for us.

I added Red Onion, Bell Pepper, and the Chard stems to some Olive Oil and cooked them down until tender.

Once they were tender, I added a 1/2 cup of white wine vinegar for some extra flavor, along with a pinch of salt and pepper to taste. After adding all the greens, I put a cover on the pan and let them wilt down until tender. This is such a simple way that we enjoy having fresh greens from the garden. I sure am going to miss them over the winter months.

Fermented Cayenne Peppers

I still had a lot of green Cayenne Peppers that didn't get a chance to turn red. I decided to try #fermenting them for the first time to make hot sauce. They have been sitting on the counter for 1 month now, and this week I put them through the blender to pulverize them and added a cup of white vinegar. I put them into a hot sauce bottle and into the fridge. I tasted it, and wow is it ever hot!

Green Beans

The beans in the tower garden were finally coming to an end due to the cold nights. I picked all the beans and pulled the plants. The towers were moved to the greenhouse to winter over.

I believe that planting the beans in late July after the lettuce was done in the towers, gave me enough time to grow and harvest quite a lot of beans. I have a limited amount of growing space, so I try to rotate my crops when one is finished.

I had enough beans for dinner and after blanching them, one bag for the freezer. We will get to enjoy them over the winter months.

Cayenne Pepper Powder

Over the summer months I picked a lot of red Cayenne peppers and let them dry naturally on a tray. Now, that the peppers had all been harvested for the season, and had totally dried out, I pulverized them in my blender to make Cayenne Powder and got a full pint. Not bad for the first time growing them.

This is the first time doing so; I have to say it is a lot hotter than the powder I had been using from the store. I will have to be mindful not to use too much when cooking, or hubby will call me out for his food being too spicy. lol

It is hard to believe it is the end of October, and our growing season is fast coming to an end. I hope you had a great year and a bountiful harvest.
