@thedrewtrott · 2018-12-19 09:35 · dsound

Jessie Valentine (@vitaminvalentine) is a Registered Dietitian Nutritionist (RDN) from New York with a master’s degree in nutrition from Long Island University-Post and a bachelor’s degree in psychology from Hofstra University. Jessie has eaten a plant-based diet for the past 15 years and has a deep understanding of the role of nutrition on both a personal and scientific level. After completing her dietetic internship, Jessie now works in a clinical environment treating patients with obesity in addition to running her personal plant-based practice and creating content around nutritional information and meal prepping.

In this episode, Jessie and I discuss a range of topics, including:

  • Working as a dietitian in a clinical environment.
  • Why plant-based options are limited in hospitals.
  • Getting started on a plant-based diet.
  • Why you should focus on variety and colour in your diet.
  • How to sneak nutrient-dense foods into desserts.
  • Meal prepping to save time and money.
