Very foggy outside and only 5C today, it's crazy. Inside the greenhouse was 8C when I went to greet the plants. They seem to be okay. Perhaps I should have put up a small heater, idk why I didn't eventhough my husband did remind me 🫣 I wonder if Winter will come early this year, le sigh 😵💫
I have a dish that may seem so simple, but it is yummy and perfect for warm rice, be it regular white rice, seasoned rice, and even more for coconut rice, such as Nasi Uduk and/or Nasi Kuning, with fresh cucumber salad, Acar Bawang, on a side. Soooooo good, I kid you not.
4 garlic
4 candlenut
1 bird eye chili
A large thumb of ginger
1/4 c water
10-14 grape tomatoes
12 boiled eggs
A block of firm tofu
3-4 kafir lime leaves
1/2 tsp sweet paprika powder
1 tbsp olive oil
Brown sugar to taste
Sweet soy sauce (kecap manis) to taste
Salt and MSG (if using) to taste
200 ml water
In a food processor, turn ginger, garlic, onion, bird eye chili, candlenut, into a fine paste with the help of water. Pour mixture into a pan, and add olive oil, sweet paprika powder, plus kafir lime leaves
Halve tomatoes, set aside
Peel boiled eggs, rinse, set aside
Cube tofu and set aside
Saute spices on the pan until fragrant, then stir in halves tomatoes, cook for 1 minute, on low-medium heat, then add in boiled eggs and cubed tofu, stir to coat nicely in the spices
Season with dark brown sugar, sweet soy sauce, salt, and MSG, then pour in water
Cook until liquid is absorbed
Enjoy with rice!
