Hope your morning is off to a good start. Monday morning is always too hectic, I feel. Like you have to snap yourself from relaxing time to a very too much to do morning, where should I try first, my mind is blowing, aaarrrggghhh. Yep. That's me, Monday mornings 🤣
Doesn't matter that I prepared things in my mind, agenda, palms, wrote down things, meal prep, and whatnot, still, come Monday morning, all hells break lose 🤣
Anyhoo! Recipe time. A delicious zucchini bake loaded with goodness 😍
1 1/4 c grated cheese 1 yellow zucchini 2 green zucchini 600 g rotisserie chicken breast, ready to use 1 c spinach 1 large onion 8 eggs 1 tbsp chicken bouillon powder Generous pinch onion powder Generous pinch garlic powder Generous pinch white pepper 1/2 c extra light tasting olive oil 1 1/2 c flour 1 tsp double acting BP
Wash and grate zucchini, no need to peel the skins
Cube the chicken and cut/slice the onion (some other time, I would grate the onion as well)
Mix flour and baking powder, set aside
In a large bowl, beat eggs with chicken bouillon, onion, garlic, and white pepper powder, until fluffy, along with olive oil
Add in zucchini, onion, chicken, grated cheese and spinach, then add in flour
Dump mixture onto parchment lined rectangular pan, bake for 40-55 minutes on preheated 350 F
Let stand 5 minutes, slice and serve
