I hope your morning didn't start with a jump scare. Mine did. My youngest called me up to his room and said he'd like to show me something, and I wasnt thinking. Yep. We were watching a nice clip of scenery, and suddenly a zombie jumped on the screen. Scared the crap out of me ๐ He said and I quote, how could you fall into one of the oldest tricks there ever was, and I said, my motherly brain when it's morning time, is filled with chores and don't forget this, and don't forget that, of important things to do for throughout the day ๐

For today's recipe. It's a fried bread from East Borneo, Wadai Untuk-Untuk. A mouthful I know, like literally ๐
200 ml extra light tasting olive oil 200 ml water 1 egg 1 cap vanilla essence A pinch of salt 3 1/4 - 4 c flour 1/4 c sugar 1 tbsp quick rise yeast
250 g unsweetened desiccated coconut 1 pandan leaf 1/4 c coconut sugar 1 tbsp sugar 3 tbsp dark brown sugar 100 ml water
Vegetable oil for frying
Into a breadmaker machine pot, pour water, oil, salt, vanilla essence, and egg. Mix a little with wooden spoon so egg would scrambled.
Add flour, sugar and yeast. Click dough cycle
Meanwhile, cook sugars, knotted pandan, dessicated coconut, and water, until well combined and liquids gone, cool to room temperature
Divide dough for 45-55 g, let rest for 15 mins. Dough is pretty oily, it's normal.
Once rested, flatten each and fill generously with coconut, shape into rounds. Let rest again for 30 minutes.
Fry bread until golden brown, turning once
