Golden Blossoms Muffins

Hi Friends!

Now that my son is getting super close to turning 16, he said to us, his dad and I, that he'd like to resign from being a Cadet, as he'd like to use his last months of being 15, before having to apply for jobs. Plus, should he get a job, it will be too much, school work, paid work, and Cadet, he doesn't think he would be able to juggle ๐Ÿ˜ Whatever his decision is, us parents can only support and lend a hand whenever it's possible ๐Ÿ˜

For today's recipe, I used some freshly picked zucchini and pumpkin flowers from the greenhouse ๐Ÿ˜ I wish I can always make tempura out of them, but too much fried goodies, so I use them in baked goods mostly ๐Ÿ˜Š

2 c flour 1/2 c sugar 1 tbsp double acting BP A pinch of salt 2 eggs 1 c milk 1 tbsp vanilla essence 5 tbsp extra light tasting olive oil Freshly picked zucchini and pumpkin blossoms Golden raisins Semi sweet chocolate chips

In a food processor, mix eggs, milk, vanilla essence, and olive oil until completely combined

Rinse blossoms, remove the stems and stamen, then slice or chop the blossoms (about 5 blossoms)

In a bowl, mix flour, salt, and sugar, then pour in wet ingredients, and add in blossoms

Mix until just combined, while folding in golden raisins and semi sweet chocolate chips. You can add as much or as little as you want, like a handful or 1/4 c, it's up to you ๐Ÿ˜Š As for me, I wanted to created that flowery feeling, so I decorated the top as a flower with raisin in center surrounded with chocolate chips.

Pour batter into greased muffin pan and bake for 18-20 minutes on preheated 400 F
