Lemon Zucchini Muffins

Happy Monday!

It's stopped Summer break here, however, starting today my oldest will be going to college for Summer courses. Kinda feel sorry for him as high school starts in 2 weeks and he already going back to schooling, but also excited that he will be able to get some early knowledge for certain things he might be doing in the future ๐Ÿ˜ It's not easy to be a parent, always conflicting feelings between things and whatnot ๐Ÿ˜…

Anyhoo

Picked some zucchinis from the greenhouse, and I turned one of them into these yummo muffins. Perfect still warm, great at room temperature, however, my favorite is chilled from the fridge, enjoyed while watching a movie ๐Ÿ˜ I'm weird, I know!

200 g golden zucchini 2 c flour 1/3 c sugar 1 tbsp double acting BP 2 tbsp grated lemon peel A pinch of salt 2 eggs 3/4 c heavy whipping cream 4 tbsp extra light tasting olive oil 1 tbsp lemon juice 2/3 c semi sweet chocolate chips

Cut zucchini into two, at 100 g each. Grate one, set aside, and place the other into a food processor, along with eggs, heavy whipping cream, lemon juice, and olive oil

In a bowl, mix flour, sugar, salt, and baking powder until completely combined, then pour in wet ingredients

Add in grated zucchini, mix everything, until just combined, then stir in chocolate chips. If you have a lemon or orange oil, add in a small drop or two, to enhance flavor

Divide batter into 6 portions at 1/2 c each into greased muffin pan, and vake for 18-22 minutes, on preheated 400 F

Cool on rack and enjoy ๐Ÿ˜
