Yay It's Friday!
It's raining and looking blah outside, but am heaps excited that it's Friday. I've been having too much energy draining occasions since Tuesday, I have enough of this week ๐คฃ
My oldest had to make a mask at school last Friday, and from his story that evening, I kinda knew something health wise gonna be affected and for sure, on Saturday he started having sore throat, come Sunday runny nose and fever, and until today, a week later, he is still with a slight cold. My youngest on the other hand, joined school band. So it's been back and forth communication with teacher and whatnot, for schedules, for instrument etc. Hectic week for sure.
Take a note, peeps. Once you have kids, YOU are (also) going back to school. It's not just your kids ๐คฃ Homework and whatnot. Still you ๐คฃ So don't say bye bye to you schooling days, yet. I said I was done with schooling back in 2003, but then I returned to school in 2009, then again in 2013 til today ๐ ๐ ๐ ๐
Anyhoo! Recipe! Fluffy buns ๐
1 c water 5 tbsp Maple syrup 1 tbsp quick rise yeast 2 c flour 2 tbsp maple syrup 3 tbsp avocado mayonnaise 1 tsp Maple essence 3/4 additional flour (watch vlog)
2/3 c water 2/3 c milk 3 tbsp sugar 2 tbsp custard powder
Enough icing sugar Maple syrup Maple essence A little milk
Mix water and maple syrup, heat in microwave to lukewarm, then stir in yeast. Pour mixture into breadmaker
Add flour, more maple syrup, maple essence, and mayonnaise. Click dough cycle
Divide dough into portion, let rest for 20-30 mins, then bake on preheated 350 af for 20-25 mins
Meanwhile, prepare the filling!
Mix custard powder, water, milk, sugar and heat in microwave until thickened. Cool slightly or to room temperature (until easier to handle)
Poke a hole on each bun, pipe custard into the hole
Mix enough icing sugar, with maple syrup, essence and a little milk, until desired consistency, then drizzle top of buns
