Hello Hive, happy Sunday to you all! I wish everyone a blissful new month.

It’s been a while here. Last week was long, stressful, but fruitful. Today is the last Sunday and the last day of August 2025. I couldn’t make it to church, but I truly enjoyed the silence at home and soaked in the morning freshness. Then came the big question: What should I eat?

I wanted something quick, delicious, and comforting to enjoy alone before the house filled up again after church. And then it struck me, Angwa Moo (oil/braised rice), one of my all-time favourites and a simple Ghanaian delicacy.

I checked the kitchen, hoping I had all I needed. And oh my God—what is Angwa Moo without fried eggs, sardines, and pepper with onions? Luckily, I still had one tin of sardines I’d been saving for toasted bread and veggies, but plans had to change.

Here’s what I used for my Sunday Angwa Moo:

3 milk tins of rice

Vegetable oil

Onions, pepper, tomatoes

2 eggs

Ginger (optional)

Sardine

Powdered crayfish (optional – my Nigerian twist!)

Cooking Process

The basic Angwa Moo needs only rice, onions, and oil, but the accompaniments make it special.

  1. Slice your onions. If you love ginger like I do, grate a bit and add it in (optional).

  2. Heat oil, add onions and ginger, then break in one egg to fry with them (this is optional, but I love it).

  3. Add your washed rice, seasoning, salt to taste, and a tablespoon of powdered crayfish (my Nigerian vibe, it added a lovely flavour).

  4. Stir-fry the rice for about 3 minutes in the onion, ginger, and egg mixture. Add water and cook until soft. Your Angwa Moo is ready!

Accompaniments

I fried the second egg with a pinch of salt.

Opened my sardine and set it aside (the sardine oil can even be added to the rice for extra aroma).

I blended tomatoes, peppers, and onions for the sauce. If I were in Ghana, I’d have used my asanka (clay grinding bowl), which gives pepper a unique taste. Sadly, mine broke after I moved to Nigeria, so I had to settle for the blender.

And that’s it, my Angwa Moo was ready! I enjoyed it alone with a cold bottle of water, feeling happy and content. What a beautiful way to bid August 2025 farewell. With this mood, I’m obviously stepping into September in high spirits. @temmylade, you missed sha.
