Nopales are thick, oval, flat, stems of the cactus plant eaten as a vegetable. It is one of the main components of Mexican cuisine and is gaining in popularity and has some health benefits. Nopales have spines or needles that first need to be cleaned. Nopales can be eaten raw or cooked and tend to have a slimy texture much like Okras. I like them a bit more tart and enjoy them with some sea salt or mixed in with eggs.
