There are many versions of rice pudding. To give you an idea, many people use evaporated milk, some others, like me, use condensed milk, and others simply use sugar. Some people use an egg. Raisins or coconut are optional, but quite common.
Today I decided to make rice pudding to please my husband and family. This is a very popular traditional dessert in Venezuela, where it is prepared with basic ingredients. It is easy to make, with a super creamy texture and warm, strong flavours of cinnamon, cloves and lemon, making it totally irresistible.

The perfect dessert for any occasion.
INGREDIENTS AND UTENSILS
- 3 cups of rice.
- 06 cups of milk.
- 02 tablespoons of sugar.
- 03 cups of water.
- Cinnamon (sticks and powder).
- 01 tin of condensed milk.
- 01 lemon (peel).
- 02 cloves.
- Pot.
- Wooden spoon.
- Metal spoon.
- Blender.
- Containers or plates.
- Knife.



PREPARATION
- Wash the utensils to be used.

- In a saucepan over heat, add 3 cups of water and pieces of lemon peel (be sure to wash the lemon thoroughly to remove any dirt that may be on the peel).

- We will also add a cinnamon stick with 2 cloves to flavour it, along with a pinch of salt. Add the raisins and bring the mixture to the boil.

- Add the rest of the water and the whole milk and blend.

- Start by adding the 3 cups of rice and 6 cups of milk. Use this amount of milk to ensure the rice is nice and creamy.

- Once it is close to boiling, remove the lid and begin to stir carefully. You can leave it alone for a while, but ideally you should stir it as much as possible.

- The time to add the condensed milk is when you taste the rice and feel that it is al dente. Continue stirring the rice and milk until the milk begins to evaporate and the 2 tablespoons of sugar begin to thicken the mixture.

- When the rice pudding is cooked, turn off the heat, remove the pieces of cinnamon and lemon peel, and let it rest for a few minutes in the pot while stirring a little more intensely so that the remaining liquid evaporates and it becomes even creamier.

- It can be served cold or warm on a plate.I highly recommend sprinkling a little ground cinnamon on top to give it that magical touch.
