The other day, I felt like making a delicious chicken soup with lots of vegetables and corn on the cob, among other things. This is an inexpensive and nutritious dish that is also very easy to prepare. That's why it's ideal when you want to share lunch with your family and friends.

This recipe is easy, with ingredients that can be found at the supermarket. You can make it any day of the week, and I'll show you how today.
***INGREDIENTS AND UTENSILS:***
- 2 1/2 liters of water.
- 2 chicken breasts.
- 2 medium heads of garlic.
- 2 medium green peppers.
- 8 sweet peppers.
- 1 long onion.
- 1/2 kilo of taro.
- 1/2 kilo of pumpkin.
- 3 large potatoes.
- 1 chicken bouillon cube.
- 2 large onions.
- 2 large plantains.
- 1 chayote.
- 1 cup of rice.
- 1 tablespoon of oregano.
- 1 large tablespoon of paprika powder (onoto).
***UTENSILS:***
- Large and medium pot.
- Containers.
- Chopping board.
- Ladle.
- Wooden spoon.
- Spoon.
- Knife.

***PREPARATION:***
- Wash the utensils to be used.

- Wash the ingredients for preparation.

- Cut the breast meat into medium-sized cubes, approximately 2 x 2 cm, or smaller if preferred. Set aside.

- Cut the vegetables. Cut the onions, green onions, chili peppers, and bell peppers into small cubes. Peel the garlic.

- Clean and wash the vegetables such as taro, pumpkin, chayote, chacos, and potatoes, and chop them into cubes. Set aside.

- **For the stew:** In a pot, sear the diced chicken and add the seasonings (onion, bell pepper, chili peppers, green onion) with a little oil.

- Add annatto, salt, garlic, chicken bouillon cube, and water. Stir the stew.

- After that, turn on the stove with water so that it cooks over low heat and add the vegetables.

- Now add the chicken stew to a larger pot with the vegetables. Add a tablespoon of oregano, cover it, and leave it on medium-low heat.

- Finally, add a cup of rice or pasta, depending on your preference, and let it continue cooking.

- When finished, before turning off the heat, check the flavor of the soup:
– If it needs a little more seasoning, you can add it and wait a few more minutes for it to cook.
– If, on the other hand, the flavor is too strong for your taste, you can add a little water and wait a few minutes as well.
- Serve and enjoy.

In addition, this soup can be accompanied by rice, cassava, arepas, or avocado. Sometimes other ingredients such as pasta, carrots, corn on the cob, celery, or other vegetables can be added to the soup.

It is also considered a healing and comforting remedy for the flu and colds in general. It also provides hydration and essential nutrients such as vitamins and minerals, strengthens the immune system, and is a source of protein for tissue repair. It also contains glutamine, an amino acid beneficial for intestinal health.
