Peanut Sauce Grilled Chicken (Ayam Bakar Sambal Kacang)

Glorious sunny morning atm. So happy to see. Maybe I can finally move the leftover rocks in the backyard to somewhere better. Lol. I think imma just shovel more of those rocks for lilac bush, as there aren't many left to cover anywhere else.

My husband is leaving for the US on Monday. Meh. Gonna be lonely, no one to bug ๐Ÿ˜ If only where he's going there would be affordable My Little Kitchen Fairies to complete my collections, would be better, but nope. There are, but overpriced ones. Double meh.

Anyhoo!

Beautiful day equals to BBQ day. Actually, even when it was raining, we would still grill outside regardless, as long as it was not crazy storm or super windy rain ๐Ÿ˜ Last night we had burger, even though it was a wet night. This following recipe tho, was done days back, only now I had the chance to share ๐Ÿ˜Š

4 x 1/3 c unsalted roasted peanuts 1 small-medium onion 5 garlic 5 candlenuts 1/3 c sunflower oil 1/3 c water 1/3 c dark brown sugar 1/4 tsp cayenne powder 2 c water Chicken bouillon powder to taste Sweet soy sauce to taste (kecap manis) 2 kaffir lime leaves (optional) Chicken thighs

In food processor, turn peanuts, oil, water, onion, garlic, candlenuts into fine paste. Pour into a pan, and add kaffir lime leaves, more water, and sugar. Season mixture with chicken bouillon powder and sweet soy sauce. Let cool to room temperature.

In a large bowl, place chicken thighs, pour some of the peanut sauce, and drizzle with sweet soy sauce. Coat evenly and marinade for at least 30 mins

Grill chicken until cooked through and serve with peanut sauce.
