Forest Syrups

When gardening on a hot day, we deserve a cold homemade drink. IMG_20220611_183153.jpg I made two syrups, one made of herbs, flowers and lemon. IMG_20220611_183118.jpg To the other syrup I added forest and garden strawberries. IMG_20220525_143910.jpg First I prepared cold tea out of herbs, flowers, lemon and one aromatized with strawberries. I used a mostly pine sprouts and roses in this syrup. IMG_20220525_134439_1.jpg I added thyme. IMG_20220525_123135.jpg Next to the garden there is a bush dog rose, I picked up a few petals and added them to the syrup. IMG_20220525_135030.jpg Elderberry flowers are beautiful and full of pollen. IMG_20220525_131156_1.jpg There's many old linden trees around the garden. The flowers smell and taste very sweet. Calendulas are beautiful looking and great to use in tea or syrup. I added just a bit of mint to the syrup, not to overtake the taste. IMG_20220525_143650.jpg

Ingredients:

  • 5 dl of water
  • pine sprouts
  • rose petals
  • dog rose petals
  • thyme
  • elderberry flowers
  • linden flowers
  • calendula flowers
  • mint
  • 1 lemon
  • 500 g of forest and garden strawberries
  • 1,6 kg of sugar
  • 2 l of tap water
  • 1 tablespoon of citric acid

Preparation:

  1. Prepare two clean jars. IMG_20220525_154803.jpg Place cleaned herbs and flowers into the jars and pour 2,5 dl of water into each. IMG_20220525_150043.jpg
  2. Boil 5 dl of water and add 700 g of sugar. Let it cool down. IMG_20220525_145509.jpg
  3. Mash strawberries and add them into one jar. IMG_20220525_144752.jpg
  4. Slice a lemon and add a few slices into each jar. IMG_20220525_145434.jpg
  5. Pour sweet water into the jars, 2,5 dl into each. IMG_20220525_151058.jpg
  6. Add a tablespoon of citric acid into each jar. IMG_20220525_150855.jpg
  7. Place the jars in the fridge for three days, mixing it once a day.IMG_20220525_151253.jpg
  8. Pour both of the teas through the strainer into two seperate pots. IMG_20220528_104234.jpg Squeeze it to get out all the aromas from the herbs, lemon and strawberries. IMG_20220528_104415.jpg
  9. Add a liter of water into each pot. IMG_20220528_113401.jpg Place them on the stove and bring it to boil. Skim off the foam on the top. IMG_20220528_114055_1.jpg
  10. Pour the syrup into sterilized bottles or jars. IMG_20220611_183028.jpg
  11. Serve it with ice cubes and mineral water. IMG_20220611_183121.jpg
