Simple vegan banana pancakes with blueberry sauce and fresh blueberries.
Ingredients:
- 1 ripe banana
- 240 ml of rice milk
- 2 tablespoons of sugar
- 1 teaspoon of baking soda
- ½ teaspoon of salt
- 1 teaspoon of cinnamon
- ¼ teaspoon of nutmeg
- ½ teaspoon of turmeric powder
- 1 tablespoon of oil
- 60 g of blueberries
- 1 tablespoon of water
Preparation:
- Mash a banana.
- Sift the flour and baking soda through the sieve in a bowl. Add sugar, salt, cinnamon and nutmeg.
If you like a nice golden color, add a bit of turmeric powder. Mix well.
- Add mashed banana and some rice milk to the dry ingredients.
Whisk it while slowly adding the rest of the milk. Don't overmix.
- Over low heat, heat up a few drops of oil and pour bits of pancake batter on the hot nonstick pan.
Flip them on the other side.
- In a small pot, mix a tablespoon of water and a few blueberries.
Cook over low heat for a few minutes.
- Serve the pancakes with some blueberry sauce and fresh blueberries.
