Hiii ๐Ÿ‘‹ How are you all doing in the Foodies Bee Hive today? I hope very good since we are almost to the end of the week ๐Ÿ˜„

Today I'll show you the sourdough scoring I did for my bakery yesterday.

Scoring the bread with a razor helps release some steam so the bread bakes properly and doesn't crack after it gets out of the oven.

All you really need is one good cut on top of the bread, but I like to make it more exciting...

My first attempt at an 8 pointed Star with arrows on the end of the rays

With scoring sourdough it all depends on how deeply you cut with your razor. The thicker lines of my stars were because I went a bit too deep.

You need a very steady hand, like a surgeon.

If the dough is very high hydration it makes it ๐Ÿ’ฏ more difficult to score, it's wet and poofy. If you score too deeply you can deflate your loaf altogether.

I love a challenge so I'll keep working on my stars with the high hydration bread.
