This week I'm a bit late with my food collection post. That would be because I had a not so good few days. Both me and son had a really messed up cold. It's 11 days already and we're still not OK.

Last week I didn't cook too much. And I only put together some recipes that are no longer than 30 minutes. I also had some help from my mom, who came visiting and she brought us soup and other foods. I hope you'll enjoy this week's recipes!

Shrimp Pasta


This is one of my son's favorite meals. Caleb loves shrimp. I think that he'll chose shrimp from all fish and meat out there. He is just a big big fan!

These Shrimp Tagliatelle are super easy to make and for this, you only need a few ingredients: - tagliatelle pasta - shrimp - parmesan cheese - garlic - salt and pepper - fresh parsley - butter

Instructions are simple as possible.

Boil the pasta according their package instructions. Meanwhile, put 50g of butter in a pan. Add shrimp and 5 garlic cloves (unpeeled), cook 5 minutes (on both sides). Add salt and pepper.

Now, here's the trick. You could use some heavy cream here, only a bit. Let's say 100ml or you can skip it. I didnt use it this time, but I usually do. There's no big difference with or without. It's up to you and your taste.

Add cooked pasta on top, mix everything and then add grated parmesan cheese. Mix again and then add fresh parsley. In case you find it to try, add a few Tbsp of the boiling water, left from pasta. Serve with parmesan cheese on top.

Vegetable Clear Soup


Well, this is not much of recipe! It's more like an invention in desperate times :)). I needed one soup and I came with t his vegetable clear soup. No meat, just veggies and a bit of tomato sauce.

I boiled all the veggies (parsnip, celery root, potato, onion, parley root), added a bit of salt and peper, green lovage leaves and a bitof tomato sauce. That's all.

It was perfect for one of these crappy days, when I could barely eat something.

Fruit Skewers


These were my son's invention. I posted our story already and how my son came with the idea of making these. My sweet 4 year old! He is such an angel. I love when he comes with his own ideas, especially in the kitchen.

Basically, there are just fruits on toothpicks. ๐Ÿ˜„

Tuna Salad on Bread


This is actually something I started to make more than 12 years ago. I've learned it from our aunt. She's living in America, in the State of Kentucky.

It is Tuna Salad.

You need one can of tuna, mayonesse, pickled cucumber, celery sticks (apio), onion, salt and pepper.

Drain the tuna and leave it in a collander. Then add 2 Tbsp of mayo, onion (chopped), pickled cucumber and celery stick (both chopped). Season with salt and pepper and enjoy on bread slices.

Bilberries Chia Seed


This is not my first time sharing this with you. Caleb is nuts about it. Actually you can see a bit of his hand in the first photo how he's waiting for me to get a shot so he can eat his jar of chia pudding. ๐Ÿคฃ

You need plain based milk, chia seeds, honey (or not), blueberries. Or any kind of berries. It goes well with everything.

Add 2-3 Tbsp of chia seeds into a 250ml jar, mix well. Add the fruits and leave overnight.

Quick Tip: Always put the pudding in a bigger jar, in case you consider you need to add a little more of milk, chia seeds or fruits.

I always do 2 or 3 portions in big jar as my little one here is a devouring on chia seeds pudding. ๐Ÿ˜

Oatmeal Breakfast


This is how a regular boring oatmeal became a star!

Topped with pear, dried cranberries and cinnamon. And one biscuit too.

This was actually mine, as my son likes it only with cacao powder, carob and cinnamon. He accepts changes on his oatmeal hardly ever.

Egg Omelette Sandwhicies


Ohh this another delicious one! If you want a good looking egg omelette, then this is for you.

But I'm writting a few guidlines here too. You can use your own homemade tortillas, but I prefer the ones you find in the store.

This is a very adaptable recipe, as you can adjust it as you wish. With onion or without, with bacon or without, with spinach or kale or without, with cheese or without....and so on. We like ours with onion, bacon and cheddar or mozzarela. I add some veggies in my omelette from time to time. And my son likes it only with bacon....but 90% of the times he wants it without anything. Just a regular omelette and some veggies on the side (bell pepper, tomatoes or cucumber).

Just some veggies


This was actually for Caleb. He loves vegetables and he doesnt need to have them with something else on the side. He was sick too and our eating needs were minimal. So one day I just added some butter in a skillet and some veggies (broccoli, green beans and carrots). Addded a bit of salt, pepper and oregano. And that was all. He ate everything and asked for more which is why I made this again the next day but had it with salmon.

Potato and Parmesan Cheese


A simple baked potato with salt, pepper and parmesan cheese on top. Caleb remembered he had this to my mom's and asked for this again last week.

I am very happy that he now accepts parmesan cheese as this food product is rich in probiotics.

Cookie and Milk


Goat Milk with cinnamon and cacao powder together with an oatmeal & raisin cookie. This cookie was the start in the kitchen for two weeks!!๐Ÿ˜๐Ÿ˜

Tuna Salad and Beans


For this recipe you'll need the following ingredients:

green salad ( I had Mache lettuce leaves) red onion tuna (canned) white beans (canned) crutoans cherry tomatoes

Assemble all ingredients on a plate. You can add olive oil as well.

Salmon and veggies


The veggies are exaclty like the ones above. One skillet, a little bit of butter, salt and pepper and veggies.

For the salmon: olive oil, salt and pepper, oregano and pink peppercorn flakes. Heat the olive oil in a skillet, fry the salmon on both sides for a couple of minutes, season with salt and pepper, oregano and pink pepper.

I'm not sure if you noticed but these recipes are no longer than 30 minutes to make, including the tuna salad, the shrimp pasta or the salmon.

That's how I cooked this whole week. Easy and fast, as I wasnt in the mood for cooking. I cant wait to get over this freaking cold. It's ridiculous that I still have it after 11 days..... Anyways, I hope you guys enjoy our foods this week and maybe try something for yourself or the family.๐Ÿ’–
