*How To Make Watermelon Pudding, Plant-based Version.*

Making pudding is my hobby because many of my nephews always ask me to make pudding in various shapes. They like fruit pudding that has a creamy taste.

Usually, the pudding that I make does not use animal milk. I use plant-based milk, from coconut ingredients, to mix the pudding. Coconut milk is very helpful for perfecting the delicious taste of the pudding.

*Coconut milk but not in thick condition because I add more water.*

To make the pudding set and chewy, I use *Agar Powder* as usual in my recipes. It's a plant-based ingredient. I've never used a gelatin version that contains animal ingredients. After all, I have a nephew who is allergic to animal milk. So, making pudding that is free from animal milk ingredients is the right choice for me to serve in my family.

At a family gathering last week, I decided to serve them watermelon pudding. This is not without good reason. This is because I have quite a lot of fresh watermelon supplies. I want the fresh watermelon to be no longer fresh tomorrow. So, I processed the watermelon into a delicious watermelon pudding, of course with a delightful creamy sensation that came from coconut milk ingredients.

THE INGREDIENTS

- 500 ml of coconut milk
- 50-60 grams of agar powder
- 100 grams of white sugar
- 200-300 grams of watermelon

**Note: For the total amount of the mixture of coconut milk and watermelon juice (which has been filtered, and separated from the fruit pulp) the total should not exceed ml of ingredients specified on the back packaging of agar powder product.**

The packaging for the powder that I use should not exceed 900 ml of water. So, I have to mix coconut milk and watermelon juice which can't be more than that amount. If there are too many liquid or water ingredients, it will make the mixture fail to set into pudding.

COOKING INSTRUCTIONS

STEP 1
Prepare the watermelon that will be used as pudding. Remove the watermelon seeds if you see black seeds. If there are watermelon seeds that look white, then there is no need to throw them away. Then blend the watermelon into watermelon juice and don't forget to filter it to get watermelon juice without pulp.

STEP 2
Mix agar powder, sugar, and watermelon juice in a cooking pan. Then Mix well. Turn on the heat, and cook the mixture until it boils and small explosions appear on the surface of the pudding mixture. Don't forget to keep stirring the mixture so it doesn't clump. Then turn off the fire.

STEP 3
Prepare the pudding molds according to the desired shape. Then transfer the pudding mixture into the pudding molds. A few tips, after the fire is turned off, continue to stir the pudding mixture that has been boiling. This is useful for removing hot steam so that the pudding results in the mold becoming better without any water droplets in it later.

Leave at room temperature, then refrigerate at least two hours before serving.
