Today's thali features Karnataka-style rice and a veggie omelet, accompanied by date chutney and fresh vegetables. Sometimes I crave a full meal but want something quick, so here’s how I managed to make a full meal in less time.
Ingredients: for both recipes
1/2 cup besan, Gram flour
1/2 cup rice flour
2 tsp oil
1 tsp salt
1 tsp garam masala
1/2 tsp turmeric
4 spring onions I used for omelet and rice.
1 tomato
1 green chili
2 boiled leftover potatoes from the other day, 1 used in an omelet and 1 in rice.
1 tsp crushed ginger garlic
Making fried rice ingredients
2 cups cooked rice
1/2 tsp turmeric powder, 1 tbsp oil. This is 2 hours before I used to make some snacks, and it is sesame oil, which can be reused 2-3 times. I don't reuse sunflower oil or canola oil after one use.
1 tsp urad dal
1/2 tsp cumin seeds
1/2 tsp mustard seeds.
Salt to taste
and half a portion of spring onion from the list.
In a bowl, place both flours and mix them
Add turmeric,garam masala, and salt, and mix them.
Add crushed ginger garlic.
Add 1 tsp oil.
In a vegetable chopper, add half of the spring onion and tomato
green chili.
Make a fine coarse mixture.
And add to the flour.
Grate a boiled potato, don't bother about peeling it, the peel will stick on the grater. Adding water gradually make a thick batter. Cover and keep aside for 10 minutes.
Meanwhile, make rice.
In cooked rice, put turmeric and garam masala. Salt mix rice thoroughly. In a pan, add oil. When oil is hot, add urad dal, turmeric, and masala. Add spring onion.
When the spring onion gets translucent
Add rice mixed with salt, turmeric, and masala.
And mashed potato, stir it well,
cover, and keep it for 2 minutes on low heat. It takes less than 10 minutes to make rice,
And the omelet batter also rests.
Warm a pan and brush with oil if it is an iron pan.
I used non-stick pan.
Place 1 ladle of batter in the pan.
Spread it.
When it changes color, brush some oil on it.
Flip it and cook thoroughly from both sides.

Serve it with date chutney and some fresh veggies.
