Normally, this is the time to harvest and enjoy locally grown fruits and vegetables. but this year's weather with no rain, and September started with heavy winds, the effect on the fruits was not good. very little production of local fruits this year. In our garden, almost all the fruits on the trees had fallen before they were ripe. Last week, my friend came with a bag full of apples, and I made some mini apple pies using them for the first time this season. Ingredients: making pie base
2 cups of white flour
1/2 cup avocado oil
1/4 tsp salt
water.
For pie filling:
10 apples
1/2 cup white sugar
1 tsp cinnamon powder
1 pinch of salt
For slurry
2-3 tbsp avocado oil
4-5 tsp sweet potato starch
Step 1: Making a pie base or dough
Mixed flour and salt, and poured oil into it
Rubbing oil and flour with my hands made the flour crumbly. When I squeeze the flour in my hand, it will hold like a lump. Using water, gradually made a normal soft dough and kept it aside.
Step 2: making apple filling
Peeled, removed the core and seeds, and chopped all the apples into small pieces.
Squeezed 1/2 lime juice on them.
Poured sugar into a hot pan when it started melting. Added all the apple pieces to the sugar.
Sprinkled cinnamon powder on it and stirred until the moisture was gone and the apples looked caramelised.
kept it aside until it cooled down.
Step 3: working on making the base/ crust
Since the dough rested for 10 minutes, I started working on it, Kneading for around 5 minutes, cut it into pieces, and made round balls to roll them out into round, thin sheets using a rolling pin.
Step 4: making a slurry
Mixed oil and sweet potato starch made a slurry like melted butter.
Step 5: preparing the crust next step
Took one sheet at a time and spread some slurry on it. Layered the other sheet on top of the first one, spread slurry on it, repeating this process, and made layers with eight sheets.
Step 5:Making rolls
On top of the sheet, spreaded some slurry and
Made a tight roll of all 8 sheets. From 2 cups of flour, I made two rolls. Wrapped them in plastic and put them in the fridge for half an hour.
Step 6: making cups
Then I took them from the fridge and made 3 cm slices
and placed all slices in a muffin pan
Using my thumb, carefully pressed the slices so all layers formed a nice cup. Repeated for all slices. making nice cups in the muffin pan.
Step 7: filling and preparing for bake

Rolled the leftover dough into a thin sheet and, using a cookie cutter, made appropriate sized rounds.
Made some cuts on each, but not the edges, and placed those rounds on the top of the cups, fixed them together using water
Step 8: final process baking
Baked them in a preheated oven at 180°C for about 20 minutes.
And they're done nice and crisp and soft inside.
