Greetings from Sri Lanka. Last week I did not get a chance to prepare a vegetable meal at home. These days we as Sri Lankans are preparing for the Sinhala and Hindu New Year, so Sunday was reserved for shopping activities. But this Sunday, I took a small chance in between household chores to make another vegetable, a simple leek curry. The Sinhala and Hindu New Year season is a busy season for all Sri Lankans. As the economy has reached a certain level of strength this year, all citizens have the opportunity to celebrate this new year. So everyone tries to use this festive season to prepare new clothes and new foods. In particular, many Sinhalese and Tamil citizens work to prepare traditional food. When we prepare a curry, the first thing we add is the vegetables and spices. Coconut milk is added after that. But for this leek curry, I decided to make a change by making coconut milk first. Finally added are the vegetables. So let's see what this difference is.

Ingredients,

  • 250 grams of leeks

  • Three green chilli pods chopped into small pieces
  • Curry leaves
  • Pandan leaves
  • One cup of coconut milk

  • One teaspoon of curry powder
  • 1/2 teaspoon of turmeric powder
  • 1/4 teaspoon of fenugreek powder
  • 1/2 teaspoon of pepper powder
  • Salt as needed
  • Few pieces of cinnamon

Preparing method

First of all, the leaves of the leeks trees should be washed well and the roots should be cut. Because leeks can have mud on their roots and leaves.

You can cut the leeks any way you like. You can reduce the amount of coconut milk by cutting leeks in medium or small pieces.

First place a clay pot on the stove and add coconut milk to it. This is a policy I have adopted for the first time.

Next add curry powder as I mentioned.

After that I added fenugreek powder and pepper powder.

Thenafter I added turmeric power to in to the mixture.

Then I added to cinnamon pieces, chopped green chilies, curry leves and chopped pandan leaves in to it.

Next add salt as needed.

After that, I mixed all the ingredients related to the above mixture well.

After mixing all the ingredients including coconut milk, spices and other ingredients, cook for about three minutes.

After another 3 minutes, stir the mixture well, cover with a lid, open the lid after two minutes and remove the mixture from the stove.
