Greetings my friends, how are you today? I hope you're doing well. Getting ready for the weekend. Today, I'm very happy to be able to share with everyone a special recipe for my friends at @plantpoweronhive, who are celebrating their 4th anniversary. My congratulations to this great team; they're doing a great job. To celebrate this anniversary, they're bringing us a contest [The Brand New PLANT BASED Challenge: A Birthday Cake! (Fourth Anniversary)](https://hive.blog/hive-180569/@plantpoweronhive/the-brand-new-plant-based-challenge-a-birthday-cake-fourth-anniversary), in which they invite us to prepare a delicious vegan birthday cake, and thus join in their celebration. It's always a pleasure to be able to participate in these contests. For my entry, I decided to prepare a chocolate cake with strawberries. It's one of my favorites. I think the combination of strawberries and chocolate never goes out of style, haha. It's an exquisite combination. This cake is very easy to make. It's moist and has a lot of chocolate flavor, haha. Plus, every time I make it, I fill it with a chocolate cream, which never fails and is delicious. It's everyone's favorite at home. Let's start with the step-by-step instructions.
Delicious chocolate cake with strawberries

Ingredients:

1 3/4 cups flour.

3/4 cup brown sugar. You can use white sugar or any other sweetener you prefer.

1 1/2 teaspoons baking powder.

2/3 cup cocoa powder.

2/3 cup sunflower oil, or whatever oil you have at home.

1 tablespoon vanilla.

1 1/3 cups plant-based milk or plant-based milk. I used almond milk. It should be warm. You can also use warm water.

1/3 cup black coffee.

Strawberries, I used about 200g.

1 teaspoon salt.

1/4 teaspoon baking soda.
For the chocolate cream, we need:

3 tablespoons cornstarch.

3 tablespoons cocoa powder.

1/2 cup white sugar.

2 tablespoons sunflower oil.

1 1/2 cups water.
Process:
1- In a bowl or container, sift the flour with a sieve, along with the baking powder, salt, baking soda, cocoa, and sugar, and mix everything well.

2- Once all the dry ingredients are well mixed, add the liquid ingredients: plant-based milk or plant-based drink, coffee, vanilla, and oil. Mix with a mixer on medium speed. I finish mixing with a spatula. Mix well until all the ingredients are well combined.

3- Once the mixture is ready, add it to a greased and floured baking dish and place it in the preheated oven for approximately 40 minutes. Keep an eye on it. You can check the cake at 390 minutes, insert a toothpick, and if it comes out clean, you'll know it's ready.

4- Once the time has passed, and the cake is ready, remove from the oven, unmold, and let cool. While it cools, prepare everything for the filling and decoration.

5- To prepare the chocolate cream, add the water, cornstarch, and cocoa to a saucepan and mix well until well combined. Then add the sugar and continue mixing. Finally, add the oil and bring to a boil over medium-low heat. Continue mixing until the cream thickens. When it begins to boil, remove from heat. Preferably, use hot.

6- With the cream ready and the cake cold, we can fill and decorate our cake. We cut the cake in half, fill the edges with the chocolate cream, and add some of the strawberries, cut into small squares, to the center. Then we add more cream on top and place the other half on top, then decorate it with the remaining chocolate cream and the strawberries. And that's it! Enjoy this exquisite chocolate cake. I assure you, it's irresistible.
