Staff meal was extra special because it was cooked by Mama Lek, who made her signature Khao Man Gai, the beloved Thai-style chicken rice. Simple yet full of flavor, this dish is comfort on a plate. I enjoy eating chicken and can down a whole chicken in one sitting. So chicken rice is something I really like to eat.

The broth from the chicken was then used to cook the rice, giving it that fragrant, savory depth that makes every spoonful irresistible.

The highlight, of course, was the sauce. Mama Lek prepared the classic dipping sauce with garlic, ginger, chilies, and a squeeze of lime. It was salty, tangy, spicy, and the perfect partner to the tender slices of chicken and rich chicken-fat rice.

Everyone dug in happily, and for a moment, the kitchen felt like home. Khao Man Gai is humble food but it was nourishment for both body and soul. Super delicious and although I cut on carbs most meals, this one was an exception and went back for seconds.
